EASY RECIPE!!! {Chocolate Chess Pie}



I absolutely LOVE this recipe!

As a Southern girl, I love some pies!! I’m very much on a pie kick right now, just like my cupcake, cake, and fro-yo binges in the past have played out – I can NOT get ENOUGH pie! I don’t know how I stay as small as I do.

When my sis was in town during the holidays, we watched “The Help” and could not take it any longer… we had to have some chocolate chess pie.  I will say – for all of you who have seen the movie – we fortunately left out Minnie’s “secret ingredient.”  Haha!

Try this out and I PROMISE you, your man, your kiddos, whoever, will LOVE it.  You might even make your grandmother jealous! J




Ingredients:
¼ cup butter
1 ½ oz unsweetened chocolate
1 ½ cups of sugar
1 tablespoon all-purpose flour
Pinch of salt
½ cup milk
2 eggs
1 teaspoon of vanilla extract (I added a little extra!)
1 unbaked nine inch pie crust/pastry shell

Directions:
Melt butter with chocolate.  Combine sugar, flour, salt, milk, eggs, and vanilla and mix together.  In a mixing bowl, combine chocolate and butter mixture with the other mixture. 
Beat with electric mixer for 5-6 minutes.
Pour filling into pie crust/pastry shell.
Bake at 350 degrees for 35-45 minutes, until set.
Let stand, cool, and set for a few minutes after baking.

Saturday night I hung out with my girl Michelle and had the pleasure of experiencing the goodness of her cupcakery from behind the scenes!

It's one of the perks of being real-life friends with a cupcake diva!

We had so much fun!





We made 'the Jones family favorite' - Choco-Coco, so she sent me home with a dozen tastes of heaven! 


We are a big chocolate & coconut fam! mmm!

Things...

Those are my Do-It-Yourself ornaments that I am working on!
I need to get busy and finish the set, but you know me...
I'm not the best at staying focused on one thing for long!

Last night when I met Michelle at Starbucks she brought me a very thoughtful gift:  she read my tweet tweet  about buying a new journal!  Except, I didn't find a new journal that day so that's to be added to my 'weekend to-dos' while I'm out and about!

These are my peanut butter & Hershey kiss cookies that I baked tonight.  I totally cheated, with a bag of mix instead of from scratch but like I said earlier - I am NOT the 'Betty Crocker' of the family.  That would be my Sissy!!
They turned out pretty good, nonetheless!!!

Happiness is Homemade

happiness is homemade

Since I am a pro at figuring out happiness through sadness, I have worked up the conclusion that 'happiness is homemade.'  We have to make happiness happen in our lives, because for some of us it doesn't just fall into our laps.  It seems like - for some of us - the worst kind of curveballs fall into our laps and the best parts of life are something we have to work at.  Like relationships, achievements, and self satisfaction.

And just like a quilt, or cupcakes, or apple pie - when it's homemade it's just  B E T T E R ! !

I woke up this morning, drank a cup of coffee, and regretted not getting out of bed sooner to go on a walk with my mom and a couple of her friends.  I brought up the idea to Momma to go on another walk with me and she agreed.  And since Dad isn't working today, he went too!  So Momma, Daddy, Millie, and I went on a 3 mile walk around our community.  I loved it!!

The Florida sunshine was BEAMING and beautiful, the weather has warmed to a comfortable degree in the 70s, and for that 45 minute walk, LIFE WAS PERFECT!!

We made that happen... that happiness was homemade!  I definitely could have just gone on a 3 mile walk with myself or just Millie and I but I wanted some quality time with my very special parents. 

SPEAKING OF HOMEMADE - Mom wants me to bake Christmas cookies for her.  I am the cook, my sister is the baker.  I am not excited about this challenge to live up to my sister's superb baking standards!  Soooo... we'll see how it goes!
